Tasting # 331: Is Cascade Hollow the last George Dickel I have to try?  (17-DEC-2008)
NotesIf so, then the best came last. It's not fantastic, but if you're going to visit George's neck of the woods, start here at the Hollow. If this was the standard for Tennessee style rather than the exception, then I wouldn't have such a godawful opinion of the whole lot.

Label is fine, a bit wordy.
SmellWell, I dunno. It's very mild and for a Tennessee style that's a blessing. Wait... swirl enough and no.. there it is. I was going to say it smelled like a George Dickel, but that's not really fair. I'm not turned off by the nose, it's just not terribly encouraging either. The typical apple vinegar is replaced by a very light sweet candy-apple nose with some kind of bite behind it. I'm on the verge of inhaling it, so I'll just leave it there.
TasteStarts fair, very subdued beyond a slight char burst in the very front. Lots of wood flavor, bordering on ALL wood flavor and some very light apple cider and char at the top. Honestly, the worst thing I can find to say is that it's so mild and... oh, I don't know, mellow? There's a bit of a sour shift in the finish, but it's not to the point of docking points. I'm really going to have to go way out and say I... sorta... enjoyed this. The worst thing about GD:CH is that I wanted to tear it down and hate it for a fun review and now I have to admit that I'm rather taken with the flavors. For a Tenn Style and especially for a George Dickel it's darn near catatonic in its flavor profile. This is very wierd. I mean, LOOK, I'm pouring myself another sip! This is surreal! Oh Whisky Gods, I'm considering 60 points! SIXTY!
